Four Foods on Friday 51

#1. I passed Costco and saw gas at $2.84 and have had Costco on the brain since. Share a cupcake, muffin or cookie recipe.

Cranberry Muffins

1 cup coarsely chopped cranberries
2/3 cup sugar
2 cups flour
3 tsp. baking powder
1/4 tsp. cinnamon
1/3 cup butter or margarine softened
1 egg
3/4 cup milk
1 tsp. vanilla
1/4 cup chopped nuts

Mix cranberries, 1/3 cup of the sugar and set aside. Sift flour, remaining sugar, baking powder, and cinnamon together in large bowl. Cut in butter. Beat egg, milk, and vanilla in another bowl, then stir them into flour mixture. Stir in nuts and reserved cranberries and sugar into the batter. Spoon into greased muffin tins. Bake at 400 for approx. 20 minutes. 8 large or 12 medium muffins.

#2. Cupcakes, muffins and cookies require something to drink. What do you drink with them?

I drink coffee especially with muffins, the kids drink milk.

#3. Which do you prefer, mini muffins and cupcakes or full sized ones?

mini, if I feel guilty about the calories, full size if I don't care!

#4. What type of muffin or cupcake pan do you use? Silicone, disposable, etc.

I have one that makes 12 at a time. I'm not sure what it's made out of, but it is pretty cheap and probably aluminum.

  3. I always think the minis are a good idea, but then I end up eating a dozen of them, so I might as well have had a jumbo cupcake. Haha.

  4. I eat craisins all the time, I guess I could put them in muffins now instead of eating them by the fistfuls lol Tks for the recipe :)

  5. We buy a lot of dried cherries. I might use those in place of the cranberries. (My husband doesn't care for them.)

  6. I love this time of year, when fresh cranberries are in season. Cranberry muffins and bread are my favorites. Oh, and fresh cranberry sauce!

  7. I eat mini out of guilt too! Although, I find myself eating multiples of mini, so probably might as well have had a big one! LOL
